Cookie Co is small-batch cookie business based in Cardiff, specialising in handmade cookies with bold, nostalgic flavours and a modern twist. I originally started Cookie Co during the COVID lockdown as a way to get by and stay busy, but as life returned to normal the business faded into the background. I always found myself coming back to baking, so I decided to revive Cookie Co properly because it’s something I genuinely love. Creating new flavours and experimenting in the kitchen is a nightly occurrence at this point. What I enjoy most is the creative side of baking and seeing people enjoy something I’ve made from scratch. I’m especially proud of bringing Cookie Co back to life and building it with more intention this time. Our signature product is the S’mores cookie (my personal favourite) our classic dough packed with milk, dark & white chocolate chips, crushed biscuit, and mini marshmallows, with a rich tea biscuit base and gooey marshmallow centre for a classic toasted s’mores experience.
